Meaning · English

From the elements, two predominating in each, the tastes arise in order: sweet from earth and water, sour from fire and earth, salt from water and fire, bitter from space and air, pungent from fire and air, astringent from earth and air. Sweet coats the mouth; tasted, it gladdens the body and refreshes the senses, and ants and their kind love it. Sour washes the mouth, sets hair and teeth on edge, and pinches eyes and brows. Salt makes the mouth run and burns cheeks and throat. Bitter clears the mouth and dulls the tongue. Pungent stings the tongue's tip, tingling, makes eyes, nose and mouth stream, and seems to burn the cheek. Astringent stiffens the tongue and binds the channels of the throat.

Vagbhata tells you two things about each taste: where it comes from and how to recognise it. The source is the five elements, or bhutas: earth, water, fire, air and space. Each taste arises where two of them predominate. Earth and water make sweet. Fire and earth make sour. Water and fire make salt. Space and air make bitter. Fire and air make pungent. Earth and air make astringent. Then come the signs. Sweet clings and coats the mouth, gladdens the whole body, freshens the senses, and draws ants. Sour makes the mouth water, sets teeth and body hair on edge, and screws up the eyes and brows. Salt brings saliva and a burning at cheek and throat. Bitter leaves the mouth clean and blunts the sense of taste. Pungent prickles the tip of the tongue, sets eyes, nose and mouth running, and seems to scorch the cheek. Astringent stiffens the tongue and binds the channels of the throat. Vagbhata teaches recognising a taste by its effect on the mouth.

Bite into a green, unripe banana. Before you have named anything, the tongue goes thick and dry, and the throat seems to cinch, like a drawstring pulled tight. Nobody had to teach you that feeling. The mouth reported it on its own. Vagbhata's six signs work the same way. Each taste announces itself through the body, and the name comes afterwards.

Today's physiology counts five basic tastes picked up by receptors on the tongue: sweet, sour, salty, bitter and umami. Umami is the savoury taste of broths, and the old list does not have it. Two of Vagbhata's six are now classed differently. Pungency from chilli or pepper is not a taste at all. It comes from the nerves for heat and pain being triggered, which fits his 'seems to burn' rather well. Astringency is a sensation of touch: the drying felt when compounds in tea or unripe fruit bind proteins in saliva. His observations hold up. Sour and salt do bring saliva, and a liking for sweet is present from birth. The idea of tastes built from paired elements has no modern counterpart. Paying attention while eating, which his method depends on, is linked today to eating more slowly and noticing fullness sooner.
