What Sour Taste Does
Ashtanga Hridayam, Sutrasthana 10.10

Meaning · English
Sour kindles the digestive fire. It is unctuous, pleasing to the heart, digestive, and wakes the taste for food. Hot in potency, cool to the touch, it satisfies, moistens, and is light. It increases kapha, pitta and blood, and sends stuck vata downward. Used to excess, it brings slackness of the body, dimness of sight and giddiness; itching, pallor, spreading inflammation, swelling, eruptions, thirst and fever.
Vagbhata describes the sour taste by what it does. It kindles agni, the digestive fire. It is rochana: it makes food appealing, the way lime wakes a dull plate. It is hridya, pleasant to the heart, and pachana, helping food cook within. It is unctuous, moistening, light and prinana, satisfying. It is hot in potency: cool to the touch, yet warming in its action. It raises kapha, the body's heavy, binding principle, pitta, its principle of heat, and the blood. It moves vata, the principle of motion, when vata is stuck, sending it downward. The verse pairs its warming power with its appetite-waking action. The second half is about measure. Sour taken habitually and in excess slackens the body, dims sight and brings giddiness. It also brings itching, pallor, spreading inflammation, swelling, eruptions, thirst and fever. The quality that helps in a small amount harms in a large one.
1. At lunch today, let sour be a touch rather than the dish: a squeeze of lemon, a spoon of yogurt or a bite of pickle you already have. If sour foods upset your stomach, skip this step. 2. Take that sour bite early in the meal. Notice whether the food starts to taste more inviting. 3. Tonight, list the sour things in the day's meals: pickle, vinegar, tomato, yogurt, sour fruit, tamarind. If sour turned up at every meal, leave it out of one meal tomorrow.
Sour taste comes from acids, such as citric acid in lemon, lactic acid in yogurt and acetic acid in vinegar. Tart flavours do bring on saliva, and flavour plays a real part in appetite, so the claim that sour makes food appealing fits ordinary physiology. Agni maps loosely onto digestion and appetite. The warning about excess has partial modern echoes. Frequent acidic food and drink can wear tooth enamel, and in people prone to heartburn or reflux, acidic foods can make symptoms worse. The specific list of dimmed sight, pallor, giddiness and fever has no established modern link to sour food. The doshas, and the idea of a taste being hot in potency yet cool to the touch, have no modern match. Today's nutrition would describe them as traditional categories, not measurable properties.
