Meaning · English
The pungent taste overcomes disorders of the throat, hives, skin disease, alasaka and swelling. It makes wounds subside. It dries up oiliness, fat and excess moisture. It kindles digestion, digests, gives relish, cleanses, and dries the food. It breaks up blockages, opens the channels and removes kapha. Used to excess, it brings thirst, loss of semen and strength, fainting, contraction, trembling, and pain in the waist, the back and elsewhere.
Katu, the pungent taste, is the bite of black pepper, ginger and mustard. Vagbhata first lists what it works against in his system: throat complaints, udarda (raised, itching patches on the skin), kushtha (the wide family of skin disease), alasaka (food that lies heavy and unmoving in the belly) and swelling. It helps a wound settle, and it dries what is oily, fatty or wet. At the table it is dipana, kindling agni, the digestive fire. It is pachana, helping food actually break down. It is rucya, waking the wish to eat. It also cleanses, and it dries the meal. It loosens what is stuck, opens the srotas, the body's channels, and lowers kapha, the heavy, moist principle. In general Ayurvedic teaching, though not in this verse, pungent is hot, light and dry, so it works against kapha's cool, heavy wetness. On that view, the same drying heat explains the warning about excess: thirst, loss of semen and strength, fainting, contraction, trembling, and aching in the waist, back and elsewhere. Ayurvedic teaching generally treats it as a spark for a meal, not its substance.
1. At your main meal today, let one dish carry a little pungency, such as a pinch of black pepper, a slice of fresh ginger or a few mustard seeds, rather than spicing every dish. 2. Over the first few bites, notice for half a minute whether your mouth waters and your appetite wakes. 3. An hour later, check for thirst, burning or a dry mouth. If they come, keep tomorrow's food milder. 4. If you have heartburn, a sore stomach, or are pregnant or unwell, leave out the extra spice and keep the meal gentle.
Parts of this fit what a family doctor would say. Pepper, ginger, mustard and chilli stimulate saliva and digestive secretions. They make food more appealing, and they can bring on sweating and a running nose. That last effect loosely echoes the old picture of opening channels. Ginger is commonly used for nausea, and there is reasonable support for that. Thirst after spicy food is common. Strong spice can also worsen heartburn, reflux and an irritable gut, which is close to the text's own warning about excess. Other claims have no good evidence as eating advice. These include drying fat, healing wounds and helping skin disease through the taste itself. Ideas such as kapha, and spice draining semen and strength, have no modern counterpart.
