Meaning · English

The astringent taste removes pitta and kapha. It is heavy and purifies the blood. It presses, it heals, it is cool, and it dries up excess moisture and fat. It holds back unripe digestion, it binds, it is very dry, and it clears the skin. Used to excess, it brings a stuck fullness in the belly, bloating, pain at the heart, thirst, wasting, loss of virility, blocked channels and retained wastes.

Kashaya, the astringent taste, is the puckering dryness of unripe banana, pomegranate rind or strong tea. Vagbhata lists what it does. It settles pitta, the principle of heat and sharpness, and kapha, the heavy, watery one. It is heavy to digest. It cleans the blood. It presses tissue together and helps wounds knit, which is what 'heals' means here. It is cool. It dries kleda, the body's excess wetness, and meda, fat. It holds back ama, food left half-digested, and it is grahi: it binds the stool. It is dry and clears the skin. Then comes the warning. Taken too much, the same drying and binding turns against the body. The belly feels stuck and bloated, the heart aches, thirst rises, the body thins, sexual vigour fades, the srotas (the body's channels) close, and wastes are held in. Ayurveda explains elsewhere that every taste helps in its measure and harms past it. So this taste belongs in a meal as one part, not the whole plate.

1. At your next meal, spend one minute noticing which foods leave your mouth dry and puckered: lentils, tea, unripe fruit, some greens. 2. If most of the plate tastes that way, add one soft, moist thing you already have, such as cooked rice, a little ghee or yogurt. 3. Drink strong tea an hour away from the meal rather than with it. 4. After eating, sit quietly for two minutes and notice whether your belly feels light or stuck.

Astringency is a real sensation with a known cause. Tannins and similar compounds in tea, unripe fruit, pulses and some peels bind to proteins in saliva, leaving the mouth dry and rough. A family doctor would agree with parts of the warning about excess. Strong tea taken often can make some people constipated, and tannins taken with a meal reduce how much iron the body absorbs from plant foods. A dry mouth can prompt thirst. Modern medicine has no match for pitta, kapha or ama, and no evidence that astringent foods purify the blood, clear the skin or harm virility. The heart pain named here has no clear modern counterpart. The broad idea, that a varied plate is gentler than a heap of any one kind of food, fits ordinary nutrition advice well.
