Pitta's Heat and Its Counterweight

Meaning · English
Slightly oily, hot, sharp, liquid, sour, flowing and pungent: such is pitta. It settles quickly with substances whose qualities are the opposite.
Pitta is Ayurveda's name for transformation in the body: the work of digesting, warming and turning one thing into another. Charaka describes it by seven qualities. It is a little oily: it has some unctuousness. It is hot. It is sharp, quick to cut through and penetrate. It is liquid. It tastes sour. It is flowing: mobile, moving things along. And it is pungent, with the bite of pepper. Then comes the rule. Substances with the opposite qualities settle pitta, and they do it quickly. The verse gives no reason. Ayurveda explains elsewhere that like increases like and unlike reduces it. So heat is met with coolness, sharpness with mildness, and flow with steadiness. Ayurveda elsewhere pairs sour and pungent with sweet, bitter and astringent tastes. What it asks of a life is attention: noticing these qualities in a meal, a season or a temper, and in what answers them.
A pot of milk on a high flame rises fast. It is hot, frothing and spilling over the rim. Nobody stirs it harder. The cook lowers the flame and splashes in a little cold water, and within seconds it sinks back. The rising milk is pitta's heat, liquidity and outward flow. The cool, steadying touch is the opposite quality that settles it quickly.
Nothing in today's physiology corresponds to pitta as a single thing. It is an older way of grouping processes now described separately: stomach acid and bile, digestive enzymes, metabolic heat and body temperature. Some of the pairings match ordinary experience. The pungency of chilli produces a real sensation of heat and can make people sweat. Spicy and acidic foods are a common trigger for heartburn in people prone to it, and doctors often suggest blander meals. Heat itself makes people thirsty and short-tempered, and cooling down helps. The old idea reaches further than this. It holds that every food carries a hotness or sharpness, and that opposites reliably correct it. Mainstream nutrition has no evidence for that. Cooling measures taken literally can also be unwise for someone ill, pregnant, elderly or very young.
