At the right time, eat what agrees with you: clean, wholesome, unctuous and warm, light, with your mind on it; food of six tastes, mostly sweet, eaten neither too fast nor too slow. Having bathed, being hungry, sitting apart, with feet, hands and face washed; having first offered to the ancestors, the gods, guests, children and teachers; having looked to the animals too, and to those in your care; having taken good stock of yourself, without finding fault, without talking, with liquids, eat the food you like, with the people you like, brought by people who are clean and devoted.
Vagbhata gathers the whole manner of a meal into one long sentence. Kala, the right time, goes with being truly hungry. Ayurveda explains elsewhere that agni, the digestive fire, is ready only when the last meal is done. Satmya is food your body is used to and agrees with. Shuci is clean, and hita is good for you. In this system's terms, food that is unctuous, warm and light is easy for agni to take up. All six tastes appear: sweet, sour, salty, pungent, bitter and astringent. Sweet leads, because sweet is held to be the most nourishing. Tanmanah means the mind stays on the food. That is why there is no talking, no complaining, no rushing and no dragging, and why the place is quiet. Bathing and washing feet, hands and face freshen the body first. Offering a share to ancestors, gods, guests, children, teachers, animals and dependents sets one's own plate inside a household. Then come a look at one's own state, some liquid with the food, liked food among liked people, and clean, willing hands to serve it. The aim is a calm and glad meal.
1. Before your next meal, wait until you feel real hunger. Then wash your hands, face and feet, which takes two minutes at the sink. 2. Sit somewhere quiet, away from your desk, with the phone in another room. 3. Before the first bite, set a little aside for someone else at home or for the birds outside, or simply thank whoever grew, cooked or served it. 4. Eat the first five minutes without talking. Put the spoon down between bites, neither hurrying nor lingering.
Much of this sits well with today's understanding. Washing hands before food is basic hygiene. Eating slowly and without distraction gives the body's fullness signals time to arrive, and distracted eating tends to mean eating more. Meals shared with people one likes are linked to wellbeing. Waiting for hunger fits the modern picture of appetite rising as the stomach empties, and agni maps loosely onto that appetite and digestion. There is no good evidence that warm food digests better for everyone. 'Mostly sweet' is closest to a meal built on staples like grains, not to sugar. Liquid with meals is generally fine. The offerings to gods and ancestors have no medical match; their worth is in gratitude and sharing. Someone who is ill, pregnant, diabetic or very old may need to eat at set times or in set ways whatever their hunger, and their doctor's plan comes first.
