Every day, use all the tastes, with each season's own tastes given the larger share. The last week of one season and the first week of the next are known as the meeting of seasons. There, the earlier regimen is to be given up, and the later one taken up, step by step.
Vagbhata gives two rules. The first is daily: eat all six tastes as a habit, not just a favourite few. The six are sweet, sour, salty, pungent, bitter and astringent. Each season then gets a larger share of its own tastes, the ones the verses before assign to it. The second rule is for the hinges of the year. The text divides India's year into six seasons of about two months each. The last week of one season and the first week of the next are called ritusandhi, the joining of seasons. In those fourteen days the old season's way of eating and living is eased out gradually, and the new one is eased in, a little at a time. The verse gives no reason. Ayurveda explains elsewhere that the body grows used to whatever it meets each day. A sudden break in habit unsettles the doshas, which are vata, pitta and kapha, the three forces that run the body. It also upsets agni, the digestive fire. So change is eased in, the way the weather itself turns.
1. At lunch today, name the tastes on your plate. If bitter or astringent is missing, add a little of something you already have, such as leafy greens, lentils or a pinch of fenugreek. 2. Look out of the window. Ask whether your weather is on the turn this fortnight. Count that as your meeting of seasons, whatever the calendar says. 3. Change one habit this week, such as one cold drink swapped for a warm one, or one lighter dinner. Add a second change next week, not all of them at once.
A good family doctor would agree with the first half. Eating across many flavours usually means eating many kinds of food. Variety, especially among vegetables, pulses and grains, is standard nutrition advice. Eating what is in season is also sensible, because the food is fresher. There is no modern evidence that one taste suits one season in the way the text describes. The doshas have no direct match in today's physiology. Gradual change has better support. The body takes days to weeks to adjust to heat or cold. The gut copes better when a diet changes slowly. Habits also last longer when they are built in small steps. A fixed fourteen-day window has no modern counterpart. A reader far from India can follow the spirit, which is the weather where they live, rather than India's calendar. Anyone on a prescribed diet should keep to it and not change it for the season.
