Meaning · English

Dhanyaka, dhanaka, dhanya, dhana and dhaneyaka; kunati, dhenuka, chhatra, kustumburu and vitunnaka. Coriander is astringent, unctuous, not strengthening to virility, promoting urine, and light; bitter and pungent, heating in potency, kindling appetite and ripening digestion. So it is remembered.

The first half is a roll of names, and several hold a picture. Dhanyaka, dhanaka, dhanya and dhaneyaka all grow from dhanya, grain: the seed as a small grain of the kitchen. Dhana means parched grain. Chhatra is a parasol, for the flower head opening like a tiny umbrella. Dhenuka may echo dhenu, the milk cow. Kustumburu is an old name the classics already use. Kunati and vitunnaka are harder to read; vitunnaka may be 'the one that pricks', for its sharp scent. Its taste is tuvara, astringent, with tikta, bitter, and katu, pungent. It is snigdha, slightly oily, yet laghu, light, and ushna, heating in potency. It is mutrala, moving urine, and avrishya, not a food that builds virility. It is dipana, kindling agni, the digestive fire this system puts at the centre of health, and pachana, helping food cook within. The verse gives no reason. In Ayurveda's terms, light, pungent, warming things wake a slow fire. So the seed sits in daily cooking, and in the panjiri offered to Krishna at Janmashtami.

Picture a pan of whole coriander seed on a low flame. For a minute nothing happens. Then the seeds darken a shade, and the whole kitchen fills with a warm, citrusy smell before anything else has been cooked. That is dipana and pachana in one picture: a small, light thing that wakes the fire and readies the meal around it.

Today coriander is simply a food. The seed is a spice and the leaf a herb, and both are eaten widely and safely in cooking. The idea of dipana fits ordinary experience: aromatic spices make food smell and taste appealing, and appetite follows smell. Laboratory and animal research has looked at coriander for digestion, blood sugar and a mild effect on urine, which echoes mutrala, but human evidence is thin and not firm. 'Heating potency' has no modern match. It describes how the body was felt to respond, not a temperature. Nothing today confirms avrishya either. Taking concentrated extracts as medicine is a different matter from eating the spice. That is for a doctor to judge, especially in pregnancy or alongside regular medicines.
